Scalloped Hubbard Squash
|3 tbsp||butter||45 mL|
|1/2 cup||chopped onion||125 mL|
|1||medium green bell pepper, chopped||1|
|3 1/2 cups||cooked, mashed Hubbard Squash||875 mL|
|salt and pepper|
|1/2 cup||crushed corn flakes or cracker crumbs||125 mL|
In a medium skillet, melt butter over medium low heat; sauté onion and green bell pepper until tender. Add cooked, mashed squash; season with salt and pepper to taste. Transfer mixture to a buttered shallow baking dish and sprinkle with crumbs. Bake at 400° F (200° C) for about 25 - 30 minutes.
